Literature revealed that the different type of phenones and their oxime are widely used as antiseptic, germicides, anthelminties analgesic, antituberculosis, herbicides, therapeutic against mycobacteria, antibacterial and antifungal, antiviral agent. Similarly allicin has wide application in biological field, mainly used as antimicrobial, antioxidant and anticarcinogenic agent: Allicin shows significant anticholesterol activity. so, used to prevent heart diseases including artherosclerosis (hardening of arteries),high blood pressure, suger,digestive disorder, reduce platelet aggregation, hyperlipidermia, reduce the incidence of a multitude of chemically induced tumer and help for AIDS patient to treat cryptosporidium & toxoplasmosis. Allicin have significant enhancing effects on the immune system The important properties of allicin is mainly due to sulphur-sulphur & sulpher- oxygen bond. These bonds are very reactive & break down into series of thiosulphinate component. It can be synthesized naturally by mild oxidation of diallyl disulphide & characterized by UV,FT-IR,MS,NMR. Naturally, it is extracted from garlic in which it is prepared by the interaction of alliin with enzyme allinase. The antimicrobial activities of different concentrations of test compounds were measured by determining the growth of test fungus and bacteria by dry weight increased method & by agar diffusion method. The test organism were aspergillus flavus, Aspergillus niger, Cryptococcus neoformons were screened in vitro on Richard's liquid medium to calculate the percentage of inhibition while antibacterial activities were calculated against Escherchia coli, staphylococcus, strepto proteus bacteria & compared with phaenol. The MIC for different fungus ranged from 2 to 8 μg/ml for pure allicin. The result indicates that the allicin has more antimicrobial properties than phaenol.
